Pistachio pudding.  Pistachio ice cream.  Pistachio nuts are not only tasty and fun to eat but also super healthy.  Pistachio are the edible seeds of the Pistacia vera tree.  What’s more, they contain several essential nutrients and can aid weight loss and heart and gut health.  People have been eating pistachios since around 7000 BC.   Pistachios are high in protein, fiber, and antioxidants. They also boast several other important nutrients, including very high levels of vitamin B6 and potassium. A single serving, about 49 nuts, contain 28% of your recommended daily B6 intake.  B6 is important for several bodily functions, including regulating blood sugar and the formation of hemoglobin, a molecule that carries oxygen in red blood cells.  That same serving, 49 nuts, contains the same amount of potassium as half of a large banana.  While few studies have looked at the effects of pistachios on weight, and weight loss, those that do exist are promising.  Pistachios are rich in fiber and protein, both of which increase feelings of fullness and help you eat less.  In one 12-week weight loss program, those who ate 1.9 ounces of pistachios per day as an afternoon snack had twice the reduction in body mass index, compared with those who ate 2 ounces of pretzels per day.  Now mind you, this isn’t in ice cream or pudding, but shelled pistachios. What’s more, pistachios still in the shell are good for more mindful eating, as shelling the nuts takes time and slows the rate of eating. The leftover shells also give you a visual clue of how many nuts you have eaten.  As a matter of fact, one study showed that individuals who ate in-shell pistachios consumed 41% fewer calories than individuals who ate shelled pistachios.  They are mean, green and could help you become lean.
